Well, I seem to have done the requisite amount of swearing and throwing things! (with a little help from the kind people here), and most of my Code seems to do as it should!
Next is either build out the Items lists, detail Town, or add better UI.

I have been diligently organizing my in-game graphics into their own subfolders, but even that's starting to feel insufficient. There are 53 subfolders already and the game isn't even half finished yet.
Now I'm wondering if I should just suck it up or further group the assets by the first letter to make it less of a struggle to browse them in Godot, like:
