i'm honestly not surprised you can listen into satellite communication.
in fact, even without this paper we kinda knew this was possible already.
most satellites are not encrypted.
in fact, this applies to the modern ones too, such as iridium, Inmarsat, and, by extension, starlink.
of course, starlink does have network level encryption, but obviously, end to end encryption is not garentied.

as much as I hate #whatsapp and #signal due to their PII requirements (I hate Whatsapp more because it's owned by meta) Whatsapp will actually do end to end encryption, so will signal. if you are communicating anything sensitive, you should absolutely never use the public switched telephone network.
any end to end encryption app will suffice when working with even insecure upstream satellite connections.
of course, for iridium go devices, you will not be able to do this unless you are a government which has the iridium encryption gateway or you have a way to get an end to end encryption application to even consider running (which is close to fucking impossible btw) so you're gonna have a shitty time!
the way i'd do it is to get starlink, and constantly use some type of encryption for coms.
this could be onion routing, where everything is end to end encrypted, it could be an on prem gateway with TLS encryption and/or VOIP system with end to end encrypted voice.
in fact, you can bounce encrypted voice on starlink and use that as your terminal, which I find very interesting.
