Question. If I move to ClassicPress, will my site look the way it looks in WordPress without me having to redesign everything again? What happens to the plugins/themes I've subscribed to, like GeneratePress or something similar, will they migrate automatically and work fine in ClassicPress?

Already making use of the notes feature in WordPress. When I do batches of pages, I like to build a template page that can be copied and re-used. Using notes to add intent behind each section.
This allows my copywriters to see where I was going with sections direct in the editor.
